Pumpkin and Mint Soup

Kitchicuri is a small bright orange squash. This is a rather sweet Squash so I treat as pumpkin and make Pumpkin and mint soup.

Ingrediants:

Squash peeled and cubed

Fresh tomatoes  a similar amount to the squash

1 onion chopped

Big bunch of mint leaves

Butter or a little oil

Method:

Saute the onion till soft add squash and stir for a bit then tomatoes till all cooked down. Whizz the soup and then add the chopped mint leaves.  You need the texture and quantity of mint to contrast with a sweet soup.  A proper recipe is in the Cooking Without Book
