Ingrediants:
Winter or Butternut squash
Lemon Thyme or ordinary Thyme and lemon rind
Garlic cloves (optional)
A chicken
Method:
Peel Squash with a potato peeler and cut into cubes
Place in a large casserole or a deep oven tray with some foil
Add sprigs of lemon thyme or alternative
Two or three whole garlic cloves (optional)
An upside down chicken
Cook in oven based on chicken weight
Turn chicken to brown if wished for last half hour
Serve chicken portions with mushy squash and gravy and green beans or strong green cabbage or Kale
Any leftovers make a great soup
